Coconut Seed Granola
A house granola that showcases half the store in one jar — no refined sugar, just honey and whole ingredients.
Store staples used: Organic Rolled Oats, Coconut Chips, Coconut Flakes, Pumpkin Seeds, Sunflower Seeds, Sesame Seeds, Peanuts
Makes ~5 cups · 40 minutes
Ingredients
- 3 cups rolled oats
- ½ cup coconut chips
- ½ cup coconut flakes
- ¼ cup each pumpkin and sunflower seeds
- 2 tbsp sesame seeds
- ½ cup peanuts
- ⅓ cup honey
- 3 tbsp oil or melted ghee
- 1 tsp cinnamon
- Pinch of salt
Method
- Preheat oven to 150°C (300°F). Line a tray.
- Toss oats, seeds, peanuts, cinnamon, and salt. Warm honey and oil together and mix through.
- Spread evenly and bake 20 minutes, stirring once.
- Add coconut chips and flakes, and bake 5–8 more minutes until golden (coconut burns fast — watch it).
- Cool completely (it crisps as it cools), then store airtight. Serve with milk, curd, or the chia pudding.
