Coconut Seed Granola

A house granola that showcases half the store in one jar — no refined sugar, just honey and whole ingredients.

Store staples used: Organic Rolled Oats, Coconut Chips, Coconut Flakes, Pumpkin Seeds, Sunflower Seeds, Sesame Seeds, Peanuts

Makes ~5 cups · 40 minutes

Ingredients

  • 3 cups rolled oats
  • ½ cup coconut chips
  • ½ cup coconut flakes
  • ¼ cup each pumpkin and sunflower seeds
  • 2 tbsp sesame seeds
  • ½ cup peanuts
  • ⅓ cup honey
  • 3 tbsp oil or melted ghee
  • 1 tsp cinnamon
  • Pinch of salt

Method

  1. Preheat oven to 150°C (300°F). Line a tray.
  2. Toss oats, seeds, peanuts, cinnamon, and salt. Warm honey and oil together and mix through.
  3. Spread evenly and bake 20 minutes, stirring once.
  4. Add coconut chips and flakes, and bake 5–8 more minutes until golden (coconut burns fast — watch it).
  5. Cool completely (it crisps as it cools), then store airtight. Serve with milk, curd, or the chia pudding.
